For a theatrical Thai setting, consider Black Ginger in Nai Yang. For a tasting-menu evening, look at hom in Kamala. For a sea-view Italian dinner, start with La Gritta in Patong. Choose one as the centre of the evening, confirm the full price and leave some time unallocated.

These are separate plans. I would not combine all three into an island-wide evening tour. Choose the one that works with where you are staying and how you like to spend time together. A very ambitious route can leave the most intimate conversation of the night taking place with your navigation app.
Let the setting suit the two of you

I would begin with the person, rather than the photograph. Some people love the ceremony of a long menu. Others would be happier choosing their own pasta, sharing a dessert and talking for an hour. Both can be romantic. The reservation should not require either person to play a role they did not audition for.
Ask for the things that genuinely matter: less background music, a little privacy, an easy-to-reach table or a particular time. “Romantic table” is open to interpretation. A concrete request gives the team something useful to work with.

I would set the comfortable all-in budget before choosing the menu. That leaves room for an extra course or a glass of something you both enjoy without turning the last ten minutes into a spreadsheet meeting. A deposit may be credited against the final bill: ask, so you do not count it twice.
Book a good table, not a guaranteed sky
For an outdoor or sea-facing evening, request two things together: the preferred table and the weather alternative. Clarify whether a terrace reservation is guaranteed, requested or allocated on arrival. Those three words make quite different promises.
I would arrive with enough time to enjoy the light, then let the weather be weather. If the view disappears into cloud, a comfortable room and a well-paced meal can still carry the evening. The photograph is inspiration; it is not part of the restaurant’s contractual relationship with the sky.
The best evening still works when the sunset declines to participate.
The reservation message I would send
“Hello, I would like to reserve dinner for two on [date] at [time]. We would prefer a quieter table, ideally with [view / covered seating]. Could you confirm the menu options, final price including charges, deposit and cancellation terms? Our dietary requirements are [details]. Please also confirm your current map pin.”
Then stop planning. Save the confirmation, organise the journey and leave the evening some space. A good dinner is allowed to include a pause, a second look at the dessert menu and a conversation that does not have a deadline.
